Ginza Fujiyama is a Japanese restaurant opened in Ginza in 2019 by Chef Takao Fujiyama, who previously served as Executive Chef at Wakuden, one of Kyoto’s most renowned restaurants.
The interior was crafted by sukiya-style carpenters from Kyoto, with Kyoto’s refined aesthetic expressed in every detail. The water used in the kitchen is sourced from a sake brewery in Kyoto, while many of the ingredients are carefully selected from the Kansai region.
Built on the foundations of Kyoto cuisine refined over many years, the restaurant showcases dishes unique to Ginza Fujiyama, making full use of exceptional ingredients gathered in Tokyo from across Japan.
